Multi-Michelin-starred French chef Marc Veyrat has turned his back on his homeland to launch an ecological restaurant in the middle of a Czech wood. He plans to combine "molecular" cookery with the fruits of the forest to create a contemporary culinary feast. Rummaging for herbs in the middle of a Czech wood. A lab for experimenting with molecular cuisine is also on the drawing board - combining cutting edge chemistry with wild ingredients. It's all about local sourcing even for the architect. Petr Suske, architect, "Obviously when you’re in a forest, you use the local wood because it’s the most logical and natural. For the kitchen we’ll use stone because the kitchen needs to be something solid.” In a country where the cuisine is fairly rustic and organic farming still in its infancy, Veyrat's venture is not without its risks. Zdenek Moravec, grocer, "Organic that'll take a while to come over here. It's not like in France or Germany here it's just too expensive for people." All the more so since the economic crisis began to bite. But Veyrat is confident that by making the most of nature and his name he can make a success of his woodland retreat.
