Heston is determined to recreate the process that the Titanic's chefs took by rotting grapes to create a sweet and ripe texture for the lamb. Heston explores different ways to create the taste, specifically focusing on how to create authentic-tasting lamb, which has a sublime flavor in memories of many first-class passengers.

The final course involves a full-scale replica of the famous Pêche Melba dessert, which consists of a task of creating authentic creams and sauces. Heston explains how the dessert has changed over the years, and why it was once one of the most sought-after dishes of the era.

After the first half of the episode, showcasing the creation of the courses from the first-class menu, the second half is entirely devoted to hosting a surprise Black-Tie party in which Heston will serve guests the authentic Titanic menu. The transformed warehouse venue, complete with replica grand staircase, invites diners to experience the ambiance and decadence of the first-class dining room.

The last half features Heston and his team creating the look and feel of a first-class dining experience by developing table settings, menus, and traditional attire.
