Hank and the gang are heading to Houston for the Texas State Three-Gun Championship. Bobby is thrilled to get out of school, and Peggy asks if she can finally visit her cousin in Dallas. Despite the excitement, things go awry when the Hills stop at a gas station, and Hank accidentally offends the owner, Buck Strickland's, mistress, Debbie. The situation takes a turn for the worse when they return to their car and find that Debbie has slashed their tires. With no way to repair their vehicle, Hank and Peggy are forced to spend the night in a nearby motel, where they learn that Buck is a popular figure in the area and has many enemies.

As the Hill family makes their way to the competition, they encounter various Texas stereotypes, including cowboys, pickup trucks, and roadkill. Along the way, they also learn about the death penalty and the execution of a man named Hoyt Fortenberry. With Bobby's newfound fascination with the subject, Hank and Peggy try to discourage him from becoming obsessed.

When they finally arrive at the championship, it becomes clear that Buck is not there to support Hank but to enter the competition himself. The two men are at odds throughout the event, and tensions rise as they compete against each other. As if the situation couldn't get any worse, Hank is forced to confront Debbie once again, and their encounter quickly escalates into a heated argument.

Throughout the episode, Hank struggles with his moral code and whether he should stand up for what he believes in or let things go. He is torn between doing what is right and what is easy, and it becomes clear that the events of the day have left a lasting impression on him.

As the championship comes to an end, Hank and Buck face each other in the final round, and it quickly becomes clear that whoever wins will have bragging rights over the other. The tension is high as they take aim, but in the end, it's unclear who emerges victorious.

The episode ends with the Hill family heading back home, each reflecting on the events of the day in their own way. Bobby is still fascinated by the death penalty, Peggy is grateful to have family she can count on, and Hank is left with a sense of uncertainty. The experience has left its mark on the family, and it's clear that they will never forget the events of their trip to Houston.

Overall, "Death and Texas" is an engaging and thought-provoking episode of King of the Hill, one that delves into heavy topics while still maintaining the show's trademark humor and heart. It is a testament to the show's ability to tackle serious issues while remaining grounded in its characters and world.
