In this episode of Anthony Bourdain: No Reservations, entitled "Heartland," Bourdain takes a journey through the heart of America to explore the food, culture, and people of the Midwest. He begins his trip in Kansas City, Missouri, where he discovers the city's rich barbecue tradition and meets a local pit master. He also visits a historic jazz club and tries his hand at playing the saxophone.
Next, Bourdain travels to Dodge City, Kansas, where he learns about the history of the Wild West and the city's role in cattle drives. He visits a local ranch and tries his hand at cowboying, learning about the challenges and rewards of the profession. He also tries some local specialties like steak and local craft beers.
From there, Bourdain heads to Minneapolis, Minnesota, where he explores the city's thriving food scene, including a visit to the iconic restaurant the Corner Table. He also meets with Somali immigrants in the city and learns about their traditional cuisine and culture.
In Wisconsin, Bourdain visits with local cheesemakers and tries his hand at making cheese himself. He also attends a traditional Polish wedding and tries some unique dishes like pierogis and kielbasa.
Bourdain's final stop is Detroit, Michigan, where he meets with chefs who are working to revitalize the city's food scene. He also visits a local urban farm and tries some creative takes on soul food.
Throughout his journey through the heartland, Bourdain meets a variety of characters who are passionate about their food and culture. From cowboys to urban farmers, he discovers the unique stories of the people who are keeping alive an often-overlooked part of America.
