After learning about the cultural significance of bison, Matty heads to the Tatanka: Story of the Bison museum in Deadwood, which tells the story of the near-extinction of bison in the late 1800s and the efforts made to restore their population. Here, Matty meets Pauline, a bison ranger, and they drive around the Wind Cave National Park to catch a glimpse of the animals in their natural habitat. Pauline explains the challenges facing bison populations today, such as habitat loss, disease, and overgrazing, and how they're working to preserve them for future generations to come.

Matty's next stop is a ranch owned by the Kopriva family, who have been raising bison for over 30 years. He learns about the complexities of breeding and caring for these animals, and how they have adapted to the changing landscape and climate over time. He also tries some bison meat, which he describes as lean and flavorful, and even gets to go bison herding on horseback with the Kopriva family.

Finally, Matty heads to Sioux Falls, where he meets some local chefs who are incorporating bison into their menus. He samples some bison burgers, bison sausage, and even bison bone marrow, and chats with the chefs about the importance of supporting local farmers and ranchers who raise bison sustainably. He also visits the Falls Park, a scenic spot where the Big Sioux River cascades over a series of rocks, and reflects on his experiences learning about the history and culture of bison in South Dakota.

Overall, Where the Bison Roam is an informative and engaging episode that sheds light on the cultural significance and conservation efforts surrounding the bison, while also showcasing the diverse culinary uses of the animal.
