Texas Cake House follows the journey of celebrity cake artist, Natalie Sideserf, and her husband, Dave Sideserf, as they manage their family-owned cake shop in Austin, Texas. In season 1 episode 11 named Nacho Average Cake, the couple faces a daunting challenge of building a cake that looks like a giant nacho and a worthy centerpiece for a renowned pub crawls and festivals event known as the Austin Tour de Fat. With only two days to finish the creation, Dave and Natalie embark on what will be one of the most challenging cakes of their careers.

The episode starts with Natalie and Dave receiving a call from the organizers of the annual Tour de Fat event. They need a cake that will dazzle and impress the thousands of attendees. The best idea they agree on is a giant nacho cake that is colorful and realistic enough to capture the essence of the festival. Dave and Natalie jump into action and start planning and sketching out the design.

The next day, Dave and Natalie visit the site where the event will take place. They take note of the environment and evaluate what they need to improve the huge cake's stability, which they expect could be as high as ten feet. They plan to transport the cake in blocks that they can assemble on-site, but this means they need to keep it lightweight and mobile throughout the construction process.

The Sideserfs then begin the arduous task of construct the nacho cake by baking and carving out the individual pieces, which will later fuse together using a simple ingredient known as ‘cake glue.’ Dave decides it will be better to use real cheese rather than fondant for the melted cheese effect, adding even more weight to the massive cake.

The team takes on the challenge of creating the individually cut-out nacho chips and tortilla strips, which they will require for the cake to look authentic. They make everything from scratch. Natalie suggests doing this all by hand, which is the most challenging process of the whole project. But, it is worth the effort when they see the finished product look exactly like nachos. They decide to take a break and head out to relax in one of Austin's famous bars.

While at the bar, Natalie and Dave are excited to learn that the event's organizers are so pleased with the giant nacho cake that they have hired them to provide all the food treats for the festival. This is a significant milestone for the Sideserfs' business as this is their first time providing the food and not just the cake for such a big event.

Natalie and Dave soon return to the shop and get back to work on the huge cake. They continue working on the remaining, more challenging parts of the cake, which include the actual cheese and salsa decorations. These involve creativity and skill to pull off, given the elaborate construction.

As the night wears on, Dave and Natalie start to feel the heat, with the deadline creeping upon them. They are worried about the looming issue of transferring the giant nacho cake to the festival site. The cake is delicate and highly fragile, and the Austin streets are not always smooth. The teams probably carry the cake in pieces, but this presents a whole new challenge for the Sideserf team.

The following day, Dave and Natalie are running out of time. They transport the pieces of the cake to the event site, and the plan is to assemble it there. This turns out to be a more massive challenge than they had imagined. But with the assistance of their team, they manage to piece it together inside an enormous tent, ready for the big reveal.

Finally, Dave and Natalie get to see their masterpiece in all its glory, towering over everyone and capturing the theme of the event flawlessly. The nacho cake becomes the center of attraction at the event, and everyone is in awe of the Sideserf team's abilities to produce such a beautiful work of art.

Texas Cake House season 1 episode 11 ‘Nacho Average Cake’ showcases the incredible talents of Dave and Natalie Sideserf. The episode illustrates their determination and ability to deliver when given challenging orders. It's a must-watch for anyone who enjoys cake artistry and construction and loves seeing talented people perform at their best.
