James gets to hire a vintage car to explore the area, where he learns about traditional fish salting and cooks a tasty vegetable curry at a local social enterprise project. Later, he learns all about Shetland community spirit and cake at one of their famous Sunday teas.

James takes a magical trip to the stunning Isle of Skye, where he's joined by Tony Singh. Tony visits a local bakery, which doubles as an art gallery and learns to make the local oatcakes. James is inspired by the amazing local seafood and cooks up a tasty dish using plaice and lovage. Their day comes to the perfect end aboard a boat, where they spot dozens of dolphins.

James takes a trip to the stunning Cairngorms National Park, where he's joined by chef pal Nick Nairn. Among today's adventures, they visit some friendly reindeer and brave the rapids on the River Spey when they go whitewater rafting. James takes a quad bike through the ancient pine forests, where he meets up with a farmer and his special breed of Highland cattle.

James sends Galton off to find out how Scilly salt is made and James hops on a boat to visit a small duck farm on the island of St Mary's. They finish the show snorkeling with native seals!
