In Kitchen Nightmares USA season 3 episode 10, the team travels to Metairie, Louisiana to visit Zeke's, a southern Creole restaurant owned by a husband and wife duo. The restaurant, once bustling with business, has taken a turn for the worse with extremely low sales and consistently negative reviews. Chef Gordon Ramsay discovers that the owners are struggling with managing their staff, updating the menu to modern tastes, and keeping up with the decor of the restaurant.
Upon arrival, Gordon is unimpressed with the decor of the restaurant, stating that it looks like a "badly decorated funeral parlor." Zeke's has no branding, no logo, and looks outdated. Gordon is further disappointed when he looks at the menu, which he deems "all over the place" and lacking a cohesive theme or focus. He orders a few dishes to taste and finds them poorly cooked and lacking in flavor.
Gordon sits down with the owners, husband and wife team John and Tina, to discuss their issues. John, a former truck driver, has extensive experience cooking homestyle comfort food. However, he has trouble transitioning from that style of cooking to restaurant-quality with regards to consistency and presentation. Tina, who manages the front of the house, admits to being hands-off with the staff, which causes them to lose respect for her and therefore, not wanting to work hard for her.
Gordon observes a dinner service and notes numerous issues within the restaurant. The kitchen is completely disorganized, with the staff lacking communication and motivation to cook good food. The dining room is equally disorganized with dirty tables and poor service. Customers are waiting over an hour for their entrees and are ultimately dissatisfied with their meals.
Gordon takes control of the restaurant, and with the help of his team, revamps the decor to modernize the space while still keeping it consistent with the southern theme. He also simplifies the menu, removing confusing items and focusing on dishes that are consistent with their southern theme. Gordon also spends time coaching John in the kitchen, teaching him how to be consistent with his cooking and presentation.
The biggest obstacle Gordon faces in this episode is changing Tina's management style. He sits her down for a heart-to-heart conversation, explaining how important it is for her to be involved with the staff and lead by example. He implements a team-building exercise where all the staff has to do is work together to create a banner for the restaurant. This helps bring the staff together and have them feel like they are part of a team.
After the revamp, the restaurant is transformed into a modern hangout spot with a southern twist. The new menu features unique items like blackened alligator and crawfish pie. The staff is more organized and motivated, and the overall atmosphere and service are vastly improved.
In the end, Zeke's owners are left in tears of joy as they realize what a difference a Kitchen Nightmares transformation can make. After Gordon and his team say their goodbyes, the kitchen staff even come together to thank them for their help, showcasing the positive change in attitude within the restaurant.
