In Episode 2 of Zumbo's Just Desserts, the remaining nine contestants face another round of challenges in their quest to become the ultimate dessert champion.

The episode opens with a fast-paced relay challenge, in which teams of three must create a three-layered dessert in just ten minutes. The catch? Each team member can only work on one layer, and they must pass the dessert off to the next team member between layers. The high-pressure environment leads to some creative solutions, as contestants must work together to come up with desserts that not only look beautiful but taste delicious.

Next up is the invention test, where contestants are given a basic ingredient and must come up with their own unique dessert creation using only that ingredient and whatever pantry items they can grab in just ten minutes. The last challenge of the night is the "Zumbo Test," in which contestants must recreate one of Adriano Zumbo's most famous desserts. This week, the chosen dessert is Zumbo's iconic V8 cake – a towering creation made up of layers of vanilla, strawberry, lime, banana, raspberry, blueberry, and orange-flavored cakes, all covered in a colorful layer of buttercream and topped with a bright green "stem." As usual, the Zumbo Test proves to be the most difficult challenge of the night – contestants must not only recreate the complex flavor profile of the V8 cake but also master the complicated assembly techniques required to create its distinctive look.

Throughout the episode, tensions run high as contestants jockey for position on the leaderboard, trying to avoid elimination while also vying for the coveted title of Just Desserts Champion. Judges Adriano Zumbo and Rachel Khoo do their best to offer words of advice and encouragement, but ultimately it's up to the bakers themselves to rise to the occasion and produce desserts that not only look beautiful but taste delicious as well.
