He's teaming up with old rival and chilli-pepper-guru Michael Michaud, to capitalise on the huge profits available at the Borough Farmers' Market in London. After stripping his polytunnel of his entire chilli crop, Hugh sets about designing his added-value take-away fast-food product - the Mexican wrap. With the Land Rover full to the brim with produce, Hugh and Michael just have the time to set up an 'honesty box' with the remains of their garden vegetables before setting off for London.Deploying the Chile Challenge, their unique-selling-proposition to tempt the Londoners into tasting their product, they make a fortune and repair to the pub for a celebratory drink. As they divide up the spoils, the Land Rover parked outside is wheel-clamped - their profits wiped out at a stroke.

It's a sad day at River Cottage as later on he sends off two of his pigs to the abattoir. Local charcoal-maker Sean Bridges comes round to lift the gloom by chopping down some of the trees which shade Hugh's vegetable patch. They take the wood to Sean's charcoal-burner which they set alight and cover up for the night. Next morning Hugh helps Sean empty the burner and gets a load of fine English recycled charcoal in return. On the way back from the burn-site, Hugh picks up old friend Ray Smith who's been to the abattoir to collect the pigs' blood. They repair to the Cottage to make a classic black pudding.

As information is power, Hugh decides to snoop on his main rivals Derek Purchase and, winner of the Longest Bean category for the last ten years, Roy Gunning. But winning prizes at shows won't pay the bills so Hugh decides to make some cash exploiting the annual influx of holidaymakers to the Dorset coast. He makes up a batch of ice-lollies and enlists the help of local motorcyclist Sarah Upton to drive him through the traffic jams. After a hot day in the saddle, selling their wears car-to-car, they clean up.

Marge's calf, Psycho, will not let Hugh anywhere near him - even for routine veterinary treatment - so he calls in local animal healer Hilary Merrill. Dismayed by the calf's moniker, Hilary renames him and sets about trying to soothe the savage beast. While two of his pigs will be going off to make bacon for the winter, Hugh has decided that his saddleback Delia should go on to breed next year. To increase the value of her offspring he plans to enter her in the Okehampton Agricultural Show but in her present wild state he's worried she'll run amok in the show ring. Local pig expert Steve Loveless calls to show Hugh the ropes and after some serious bonding Delia begins to respond to his gentle commands.

Good weather makes good hay and Paddy reckons that the next five days will give them the window they require to finish the job. To pay for the hire of the haymaking kit, Hugh clears his polytunnel of his peas and beans to sell them at the Bridport Farmers' Market. As ever, he adds value by converting his raw materials into fast food. His chilled soups are perfect for a hot day and sell like hot cakes. With the mowing completed, Hugh invites local felt-making experts Christine Endicott and Vicky Fry to River Cottage to turn his sheep's fleeces into a fashionable garment. After dyeing the wool there's much carding, scrubbing and rolling before the felt is finally ready for use.

His spirits are raised by the news that huge shoals of cuttlefish are massing off the Dorset coast. Scenting a free meal he sets about designing a honey trap: a lobster pot fitted with a dummy female cuttlefish to lure in the eager males.

Hugh arranges a meeting with Antony Hichens, his landlord from the big house, to discuss the prospect of Hugh acquiring the rights to fish for the huge grass carp that inhabit the muddy estate lake. Amazed that his carp are in fact edible, Antony challenges Hugh to serve one at his upcoming dinner party. Should his guests find it palatable, Hugh gets the fishing rights, if not, Hugh has to clean out Antony's garden pond.

But thinking of the future he gets busy building 'chickenopolis' - a complex of high-rise chicken accommodation to house the poultry for his latest money-making scheme: to breed the ultimate roast chicken. Poultry-guru Richard Hicks calls round with Hugh's breeding stock and over pancakes in the cottage they wager the cost of the birds on their performance in the local pancake race. Richard wins by a whisker.
