In Season 3, Episode 7 of Restaurant Startup, titled "Cutting the Apron Strings", food industry moguls, Joe Bastianich and Tim Love, search for the next big restaurant idea. The other contender for funding in this episode is a couple named Liam and Gina, who want to open up a cozy bistro with a French-inspired menu. Liam has worked in the restaurant industry for years and is ready to take the leap and start his own business. They are asking for $250,000 for a stake in their company.

Bastianich and Love are impressed with both of the pitches, but they are concerned that Ashley's idea might not be sustainable long-term. They worry that skewers are too much of a one-trick-pony and may not have the longevity to be successful. They also are skeptical of the amount of time and effort it will take to train staff to properly prepare and serve skewered food.

While Liam and Gina's idea seems to have a stronger foundation and is more likely to be successful, Love and Bastianich find themselves thinking that there isn't enough personality in the concept to really sell it. They express concern that the menu doesn't differentiate them enough from other similar restaurants in the area.

As always, the business owners have to pitch their ideas to a panel of potential investors, and both Ashley and Liam and Gina have to make their case as to why their restaurant is worth investing in. The panel includes seasoned restaurateurs and successful businesspeople, all of whom know how to spot a good opportunity.

The investors in this episode are impressed with both of the pitches, but ultimately, they end up making a deal with Liam and Gina. The couple's bistro idea seems to be a safer investment, and there is a lot of potential for growth and expansion down the line.

Despite not securing funding, Ashley takes the disappointment in stride. She takes the constructive criticism and feedback from the investors and the hosts and decides to pivot her business plan. She decides to focus on takeout and delivery and markets her skewers as a fun, convenient, and shareable option for families and friends. She also decides to open up in a slightly different location, which may give her an edge over her competition.

In this episode of Restaurant Startup, we see entrepreneurs take risks and use feedback to create stronger business plans. No matter if they succeed or fail in securing funding, the experience gives them valuable insight. We see that the restaurant industry is highly unpredictable but that passion and determination can take you far.
