In this episode of Great British Menu, the competition shifts to Wales as three chefs battle it out to create the perfect starter. With a focus on celebrating Welsh ingredients and traditions, the chefs are tasked with creating dishes that are both original and delicious.
First up is veteran chef Chris Harrod, whose approach to cooking is heavily influenced by his upbringing in the Welsh countryside. He decides to create a dish centered around one of Wales' most iconic ingredients- lamb- but with a twist. His dish involves slow-cooked lamb shoulder, which is accompanied by a flavorful broth made from Welsh cider and honey. To top it off, he adds pickled blackberries for a pop of color and acidity.
Next is chef Tessa Bramley, who has been cooking for over 30 years and has been a fixture on the British food scene since the 90s. Bramley chooses to focus on another iconic Welsh ingredient- leeks- which she combines with crab for a unique twist. Her dish, which she calls "Crab and Leek Tart with Laverbread", features a crispy pastry crust filled with the delicate flavors of crab and leek. She also adds laverbread, a type of seaweed that is native to Wales, for an extra dimension of flavor.
Last but not least is young chef Andrew Sheridan, who is known for his innovative approach to cooking. Sheridan decides to take a more unconventional route and create a dish inspired by Welsh mining communities. He uses a local cheese called Perl Las to create a "cheese and onion" starter reminiscent of the classic flavor combination found in Welsh delicacies like the classic Welsh Rarebit dish. Sheridan's dish showcases his ability to think outside the box while still honoring traditional Welsh flavors.
The judges, consisting of two Michelin-starred chefs and renowned food critic Jay Rayner, are impressed by the creativity and execution of all three dishes. They note the skillful use of Welsh ingredients in each dish, as well as the chefs' ability to bring their unique backgrounds and experiences to the table.
In the end, only one chef can be declared the winner of the Wales starter round. The judges deliberate and discuss each dish in detail before coming to a final decision. The winner receives a coveted spot in the Great British Menu final, where they will compete against the winners from the other regional rounds for a chance to cook their food at a prestigious banquet in honor of the NHS.
