As one of the most popular culinary shows on television, Chopped has captivated audiences for over 20 seasons. The premise of the show is simple: four contestants, usually professional chefs, compete against each other to create three courses - appetizer, entrée, and dessert - using a basket of mystery ingredients. These ingredients can range from the mundane to the unusual, and the competitors have just 20 minutes to prepare their dish in the appetizer round, 30 minutes in the entrée round, and 30 minutes in the dessert round. At the end of each round, a panel of judges eliminates one contestant based on the taste, presentation, and creativity of their dish, until only one winner remains.
In season 23, Chopped introduced an all-star tournament, featuring previous contestants who had competed on the show and won, but had not yet received the title of Chopped Champion. In All-Stars Tournament: Part 3, the third episode of the tournament, four returning contestants compete for a chance to move on to the next round.
The contestants are: Anne Burrell, a renowned chef and television personality; Hung Huynh, winner of season 3 of Top Chef; Brian Malarkey, a celebrity chef and restauranteur based in San Diego; and Lisa Garza, a chef and restauranteur from Texas.
In the appetizer round, the chefs are tasked with creating a dish using chicken feet, hearts of palm, Meyer lemon, and sake. Anne Burrell puts her culinary skills to the test by creating a dish of poached chicken feet with hearts of palm and a Meyer lemon and sake sauce. Hung Huynh takes a different approach, using the chicken feet to create a crispy fried dish with a hearts of palm and Meyer lemon salad on the side. Brian Malarkey works quickly to create a ceviche of hearts of palm and Meyer lemon, using the chicken feet to create a broth. Lisa Garza takes a risk by creating a dish of fried chicken feet with hearts of palm and Meyer lemon chutney. At the end of the round, the judges must eliminate one contestant based on the taste, presentation, and creativity of their dish.
In the entrée round, the remaining contestants must create a dish using veal chops, baby artichokes, quinoa, and arugula. Anne Burrell demonstrates her culinary expertise by preparing a grilled veal chop with quinoa and a baby artichoke salad. Hung Huynh takes a bold approach by using the quinoa to create a risotto, topped with sliced veal chop and baby artichokes. Brian Malarkey takes a risk by creating a wrap using the veal chop, quinoa, and baby artichokes, with a side salad of arugula. Lisa Garza rounds out the round with a dish of pan-seared veal chop with a quinoa and baby artichoke pilaf and a side of arugula salad.
In the dessert round, the remaining contestants must create a dish using pineapple, unsalted butter, puff pastry, and mascarpone cheese. Anne Burrell creates a dessert of warm pineapple and mascarpone tarts, using the puff pastry as a crust. Hung Huynh takes a creative approach by creating a pineapple and mascarpone cream puff, using the unsalted butter in the pastry cream. Brian Malarkey puts his spin on a classic dessert by creating a pineapple and mascarpone bread pudding, with a puff pastry topping. Lisa Garza takes a brave approach by creating a dessert of warm pineapple and mascarpone crostadas, using the puff pastry dough as the crust.
At the end of the round, the judges must evaluate the taste, presentation, and creativity of each dish to determine the winner of the All-Stars Tournament: Part 3. Will it be Anne Burrell’s expertly crafted tarts, Hung Huynh’s creative cream puffs, Brian Malarkey’s classic bread pudding, or Lisa Garza’s brave crostadas?
