In the small town of Trinity, Texas, the local police department consists of mere handful of officers. Fat Cops follows the officers of Trinity P.D. both on-duty, and off-duty, as they police the streets (and backroads) of their small community. Every episode centers around the various antics of the officers, and other residents of the town.

While the crime rate might not be high in Trinity, Texas, the police department finds plenty of work keeping their small town safe. Plenty of laughs, and eating donuts, keeps the officers busy. They must also deal with town drunks, theft, and department budget cuts, which the officers handle in the most entertaining of ways.
