He arranges the seafood on top in a decorative pattern and lets it cook for 20 minutes until the rice is tender and the seafood is cooked through.
Meanwhile, Chef Felix and Chef Carlos are also hard at work on their own versions of paella. Chef Felix opts for a traditional chicken and rabbit paella, while Chef Carlos chooses a mixed seafood paella with squid, clams, and shrimp.
Once all three dishes are finished, it's time for the tasting. The judges, who are local food experts and paella aficionados, are given blind tastings of all three dishes. They are asked to rate each dish on its flavor, texture, and overall presentation.
