Chef Victoriano Lopez explains the history and flavors behind the restaurant's signature dish, cebiche, a raw seafood salad that is traditionally served with a corn and sweet potato base. Tamara also tries a range of other Peruvian specialties, including grilled octopus and anticuchos, a popular street food made from marinated beef hearts.
