In season 2, episode 4 of The Zimmern List, host Andrew Zimmern travels to Birmingham, Alabama, to explore the food scene and uncover some hidden gems. Known for its Southern hospitality and rich history, Birmingham is also a city that has undergone significant transformation in recent years, with a booming food and drink culture.

Zimmern begins his journey at Rodney Scott's BBQ, a barbecue joint that has gained national attention thanks to its traditional slow-cooked meats and homemade sauces. Here, Zimmern tries the pork ribs and chicken wings, both of which are cooked to perfection and represent the best of Southern barbecue.

Next, Zimmern heads to Saw's Soul Kitchen, a small restaurant that focuses on classic Southern comfort food. The menu is packed with dishes like fried chicken, mac and cheese, and collard greens, all made with fresh, local ingredients. Zimmern tries the smoked chicken and the pork belly mac and cheese, both of which are standouts.

Zimmern also explores the Vietnamese food scene in Birmingham at a restaurant called Pho Que Huong. Here, he tries a classic bowl of pho, a traditional Vietnamese noodle soup made with beef broth and an assortment of meats and vegetables. Zimmern notes that the pho at Pho Que Huong is some of the best he's ever had, with rich, flavorful broth and perfectly cooked noodles.

Another highlight of Zimmern's trip to Birmingham is his visit to Hot and Hot Fish Club, a high-end restaurant that celebrates Southern ingredients in creative, sophisticated ways. Zimmern tries the famous Alabama tomato salad, which features heirloom tomatoes, blue cheese, and bacon, as well as the restaurant's signature chicken liver mousse. Zimmern notes that both dishes are elevated and complex, showcasing the skill and talent of chef Chris Hastings.

Zimmern also explores Birmingham's thriving cocktail scene at a few different bars, including The Atomic Lounge and Queen's Park. At The Atomic Lounge, Zimmern tries a cocktail called the Rocket Man, made with peanut butter whiskey, banana liqueur, and grape jelly, while at Queen's Park, Zimmern tries a classic old fashioned made with locally distilled whiskey and a house-made bitters blend.

Overall, Zimmern's trip to Birmingham showcases the diversity and richness of the city's food culture. From classic barbecue to inventive cocktails, there's something for everyone in this Southern city.
