In this episode of Unique Sweets, titled Seattle Sweets, we venture to the Pacific Northwest to explore some of the best desserts Seattle has to offer. Hosts Hedy Goldsmith and Duff Goldman take us on an adventurous journey as we discover the unique and innovative ways local pastry chefs are using Pacific Northwest ingredients to create incredible and delicious desserts.

Our first stop is at Hot Cakes Molten Chocolate Cakery where we meet chef and owner, Autumn Martin. She shows us how to make the perfect molten chocolate cake using premium quality chocolate and other local ingredients. We also learn about her unique flavor combinations such as smoked chocolate and whiskey caramel sauce.

Next, we visit Amandine Bakeshop where we meet Michelin-starred pastry chef, Sara Naftaly. She showcases her sophisticated French-style pastries such as the Kouign Amann and macarons made with local berries. We learn about the French baking techniques that she uses in her pastries and the importance of sourcing the best ingredients.

We then stop by the hotspot, Dahlia Bakery, where renowned chef Tom Douglas gives us a behind-the-scenes look at the making of their famous Triple Coconut Cream Pie. This dessert is a Seattle classic and has been featured in numerous publications, including Oprah Winfrey's O Magazine. Tom shares with us the history behind the pie, how they make it, and what makes it so special.

Continuing our journey, we head to Rachel's Ginger Beer where we meet founder Rachel Marshall. She shows us how to make her famous Ginger Beer Float, a unique twist on a classic float using her handcrafted ginger beer. We also learn about the variety of flavors of ginger beer that she offers and how she uses it in other popular desserts such as her root beer float-inspired root beer freeze.

Lastly, we visit Bateau, a French steakhouse that offers a unique dessert experience. We meet chef and owner Renee Erickson who shows us how to make her signature cast-iron apple pie. The pie is made in a cast-iron skillet and is served with house-made caramel sauce. We also learn about the savory elements that Renee uses in her pastry, such as thyme and sea salt, to balance out the sweetness.

Overall, this episode highlights the unique and diverse range of desserts that Seattle has to offer. Hedy and Duff take us on a culinary journey through the city, showcasing some of the best pastries, cakes, and pies.
