After a quick break for some authentic New York pizza, Mike heads to a local art studio to learn about the process of forging large metal sculptures. He meets with a team of artists who walk him through the process of designing, cutting, and welding together a massive metal sculpture of a dragonfly. Mike gets a chance to try his hand at cutting and welding as well, and he discovers that there's a great deal of skill and artistry involved in creating these beautiful works of art.

Finally, Mike heads to a local fish market to learn about the process of preparing and selling fresh fish and seafood. He meets with the owner of the market, who shows him how to clean and fillet a variety of fish and shellfish. Mike also gets a chance to learn about the different types of fish and seafood that are most popular in New York, and he discovers that the city's residents have a real taste for the freshest and best quality fish available.

Overall, "Dirty Jobs of the Big Apple" is an exciting and informative episode of Dirty Jobs, showcasing some of the most interesting and challenging jobs in one of the world's most vibrant cities.
