In this episode of 30 Minute Meals, host Rachael Ray heads to Cape Cod for a seafood-inspired supper. Rachael starts off by making a quick and easy shrimp scampi with linguine. She starts by cooking the pasta and while it boils, she heats up some olive oil and butter in a skillet. She then adds minced garlic, red pepper flakes, and the shrimp to the skillet. To finish off the dish, she adds some white wine, lemon juice, and parsley.
Next up, Rachael moves on to her clam chowder. She starts by sautéing some diced bacon in a pot until it’s crisp. She then adds diced onions, celery, and garlic to the pot and sautés until the vegetables are softened. She adds diced potatoes, clam juice, and broth to the pot and simmers until the potatoes are tender. Finally, she adds some canned clams, heavy cream, and cornstarch to thicken the chowder.
For the main course, Rachael makes a broiled lobster tail with drawn butter. She starts by cutting the top of the lobster tail open with kitchen scissors. She then bastes the lobster with a mixture of melted butter, garlic, and lemon zest. She broils the lobster for a few minutes until it’s cooked through. To make the drawn butter, Rachael simply melts butter in a small saucepan and adds some lemon juice and salt.
To round out the meal, Rachael makes a simple green salad with a lemon vinaigrette. She starts by whisking together some lemon juice, Dijon mustard, honey, and olive oil. She drizzles the dressing over a bowl of mixed greens, tomatoes, and cucumbers.
For dessert, Rachael makes a blueberry cobbler. She starts by mixing together some flour, sugar, baking powder, and salt in a bowl. She then adds some milk and melted butter to the bowl and stirs until a batter forms. She pours the batter into a greased baking dish and sprinkles fresh blueberries over the top. Finally, she bakes the cobbler until it’s golden brown and bubbly.
