Beach Bites with Katie Lee is back for its third season and in this episode, titled "The Bahamas," Katie takes us on a culinary adventure to one of the most beautiful islands in the Caribbean. The Bahamas is a breathtaking archipelago of over 700 islands, with crystal-clear turquoise waters and a rich cultural heritage that lends itself to some of the most delicious food in the region. Katie sets out to explore the island's culinary scene and discovers the many dishes that make up Bahamian cuisine.

The episode opens with Katie arriving in the Bahamas and heading straight for the beach. She's excited to be back in the Caribbean and eager to explore the island's culinary scene. Her first stop is at a local beach bar, where she meets up with a group of locals who are more than happy to show her around. They start with a classic Bahamian cocktail, the Bahama Mama, made with dark rum, coconut rum, orange juice, and pineapple juice. It's the perfect way to start off the day and get in the island spirit.

Next up, Katie heads to a local fish market to see what's on offer. The Bahamas is known for its fresh seafood, and Katie is determined to sample as much of it as possible. She meets up with a fisherman who shows her everything from conch to lobster, and even a few types of fish she's never seen before. She decides to try a local delicacy, conch salad, which is made with fresh conch, lime juice, onion, and peppers. It's a refreshing and delicious dish that's perfect for a hot day on the beach.

After her visit to the fish market, Katie heads to a local restaurant where she meets chef Tim Tibbitts. Chef Tim is a Bahamian native who has traveled all over the world to hone his craft, but he always returns to his roots. He shows Katie how to make one of his favorite dishes, grouper fingers. The dish is made with fresh grouper, seasoned breadcrumbs, and a homemade tartar sauce. It's easy to see why it's one of Chef Tim's favorites – it's absolutely delicious.

Katie's next stop is at a local bakery, where she meets the owner, Miss Anna. Miss Anna is known for her traditional Bahamian bread, which is a dense, slightly sweet bread that's perfect with a pat of butter. Miss Anna takes Katie through the entire bread-making process, which includes kneading the dough by hand and baking it in a traditional stone oven. The end result is a warm, fragrant loaf of bread that's nothing short of perfection.

Katie's last stop of the day is at a local seafood shack, where she meets a group of fishermen who have just come in with their catch. They show her everything from snapper to lobster to conch, and Katie can't resist trying some of the freshly grilled fish. She also tries a traditional Bahamian dish, peas and rice, which is made with pigeon peas and seasoned with thyme, onions, and peppers. It's a simple yet hearty dish that's perfect with the grilled fish.

As the sun sets over the island, Katie reflects on her day of culinary exploration. She's tasted everything from classic cocktails to fresh seafood to traditional Bahamian bread. The combination of flavors and textures has left her feeling satisfied and inspired. She can't wait to see what other culinary adventures await her in the Bahamas.
