First, he travels to Pocatello, Idaho, to visit a place called The Bridge. The owner, Lynn Trillo, has been cooking for over 50 years and is known for her classic American dishes. Lynn's son, Tres, tells Guy about The Bridge's famous hand-breaded chicken fried steak, covered in a homemade gravy and served with mashed potatoes and green beans. Guy cannot resist trying the dish and declares it one of the best chicken fried steaks he has ever had. He also enjoys some of the restaurant's other classic dishes, including a soup made with fresh vegetables from Lynn's garden.

Next, Guy heads to Louisville, Kentucky, to visit a place called Bootleg Bar-B-Q. The restaurant has been around for over 30 years and is now run by the founder's son, Brian. Bootleg Bar-B-Q offers traditional southern BBQ dishes, including ribs, pulled pork, and brisket, all smoked for over 10 hours using a secret family recipe. Guy tries the ribs and brisket and is blown away by the tender, smoky meat. Brian also shows Guy how to make Bootleg Bar-B-Q's signature hot sauce, which is made with fresh jalapenos and has a fiery kick.

Finally, Guy travels to Portland, Oregon, to visit a place called Screen Door. The restaurant is owned by a husband and wife team, David and Nikki Welch, and serves southern-style comfort food with a Pacific Northwest twist. Guy tries a few dishes, including fried okra with a spicy remoulade sauce, fresh biscuits with honey butter, and a chicken and waffle dish, which is served with a unique apple cider syrup. David and Nikki also show Guy how to make their signature dish, a fried oyster po' boy made with a homemade remoulade sauce and fresh pickles.

Throughout the episode, viewers get a behind-the-scenes look at what makes these family-owned restaurants special. They learn about the generations of cooking expertise passed down through different families and hear stories about how each restaurant got its start.
