The two chefs have to create a dish that can beat Bobby Flay's signature dish, a grilled skirt steak with chimichurri sauce. Chef Louie decides to stick with his Italian roots and makes a dish inspired by a classic bistecca alla Fiorentina, a steak marinated in garlic, rosemary, and olive oil and served with a side of roasted potatoes and arugula salad. Chef Miguel takes a more unconventional approach, making a dish he calls "Filipino BBQ," featuring a grilled skirt steak marinated in soy sauce, citrus, and annatto seed oil and served with a side of adobo rice and pickled papaya. It's a close competition, but only one chef can move on to face Bobby Flay.
