In season 2 episode 8 of Beat Bobby Flay, titled "Smile Now, Cry Later," two talented chefs compete for the chance to take down renowned chef Bobby Flay. The episode's title is inspired by the Mexican saying "smile now, cry later," which is often depicted in traditional masks used in the Day of the Dead celebrations in Mexico.

The first chef, Chef Jumoke Jackson, is a self-taught cook who learned to cook from his grandmothers. He incorporates his African-American heritage and upbringing in Alabama into his cooking style and is known for his unique flavor combinations. He faces off against Chef Bernie Matz, who has been cooking since he was 15 and has worked in some of the best restaurants in Miami and New York City. Chef Matz is known for his modern twist on classic American cuisine and his ability to showcase different flavors in his dishes.

In the first round, the chefs are given 20 minutes to create a signature dish using a mystery ingredient chosen by Bobby Flay. The ingredient is revealed to be fresh crab, and both chefs quickly get to work. Chef Jackson decides to make a crab cake with a Southern-style remoulade, while Chef Matz creates a crab cioppino with a coconut broth. The judges comment on both dishes, praising the flavors and presentation of each.

In the second round, the remaining chef has to prepare a dish that beats Bobby Flay's own signature dish in just 45 minutes. This week, the dish is Bobby's famous spaghetti and meatballs, which he has been cooking for over 25 years. Chef Jackson decides to make a spaghetti and crab ball with a Creole tomato sauce, while Chef Matz prepares a spaghetti and crab carbonara. The judges taste both dishes and provide feedback on each, noting the subtle differences in flavors and consistency.

In the final round, the remaining chef has to prepare a dish in just one hour that represents their food philosophy and style. Chef Jackson decides to make a barbecued shrimp and grits dish with a pineapple and mango salsa, while Chef Matz creates a dish that combines Mexican and French flavors, with pan-seared scallops and a jicama slaw. The judges are impressed with both dishes, but ultimately choose a winner based on taste, presentation, and creativity.

Throughout the episode, viewers can expect to see plenty of cooking action and behind-the-scenes moments, as well as commentary from the judges and chefs. The tension builds as the clock ticks down and the final dishes are presented to the judges, who must decide which chef ultimately Beat Bobby Flay.
