Ep 7. The Underground Railroad

In season 20 episode 7 of Bizarre Foods With Andrew Zimmern, titled "The Underground Railroad," the host travels throughout the southern United States exploring the historical significance of this network of secret routes and safe houses used by African American slaves to escape to freedom in the north during the 19th century.

The next stop on Andrew's journey is North Carolina, where he discovers a hidden cellar that was once used as a stop on the Underground Railroad. He speaks with descendants of the family that ran the station and explores the surrounding area, tasting traditional barbecue and discussing how slaves used food to sustain themselves on their journey to freedom.

In South Carolina, Andrew meets with a chef who pays tribute to the African American culinary influence in the state, serving dishes such as black-eyed pea fritters and okra gumbo. He also visits a historic church where slaves once gathered to plan their escape and hears stories of the bravery and determination of those who risked their lives to escape to freedom.

Finally, Andrew travels to Georgia and meets with a historian who shares with him the story of a pivotal Underground Railroad figure, William Still. He also tastes some of the state's famous peaches and learns about the role of fruit in the lives of slaves and their journey to freedom.

Throughout the episode, Andrew delves into the rich history and cultural significance of the Underground Railroad while sampling local cuisine that has been passed down through generations.
