Doughboy Does Dallas is the seventh episode of the tenth season of Carnival Eats, a popular food show that takes you on a wild ride through North America's most famous and creative food festivals.

In this episode, host Noah Cappe travels to Dallas, Texas, where he discovers a whole new level of Southern cuisine. First up is the State Fair of Texas, one of the largest and oldest state fairs in the country, where he meets the Doughboys, two brothers who have been deep-frying everything from spaghetti and meatballs to brownies for over 30 years. Noah can't resist trying their deep-fried chicken-fried steak on a stick, covered in a creamy white gravy that's so good it should be illegal.

Next, Noah heads to the State Fair's midway, where he comes across a food stand called Ruth's Tamale House. Here, he samples a traditional Tex-Mex dish made up of juicy beef, masa dough, and spicy chili sauce, all wrapped in a corn husk and steamed to perfection. But the real star of the show is Ruth's unique tamales filled with everything from chicken and jalapeño to chocolate and marshmallows, all topped off with a generous drizzle of melted cheese.

After a short detour to the Texas Pete Festival, featuring the spicy hot sauce that's a staple of Southern cooking, Noah heads back to the State Fair to experience one of its most famous offerings: Fletcher's Corny Dogs. Noah discovers the history behind this iconic fair food and learns the secret to making the perfect cornmeal batter. He then tries not one, but two delicious corn dogs – the classic and a new bacon-wrapped version – each served with a side of nostalgia.

Noah caps off his visit to Texas with a trip to the Addison Oktoberfest, where he meets the owner of the Bavarian Grill, a German restaurant that specializes in authentic homemade sausages. He tries a variety of sausages, each filled with a unique blend of spices, herbs, and meats, and tops them off with sauerkraut and a cold beer. Noah also tries his hand at a dance that has become synonymous with German culture, the Chicken Dance, and leads a crowd of festival-goers in the traditional moves.

Overall, Doughboy Does Dallas is a mouthwatering episode that showcases the best of Southern cuisine and the vibrant food festivals that bring people together to celebrate good food, good company, and good times. Noah's infectious personality and love for all things food make it a fun and entertaining journey for viewers as well.
