As Fieri continues his journey, he discovers a Korean-Mexican fusion restaurant in Los Angeles that has been gaining popularity for its innovative dishes. He tries out their famous kimchi quesadilla and learns about the inspiration behind this unique style of cuisine. In Louisville, Fieri visits a restaurant that has been churning out hot chicken for over a decade. He talks to the chef about the origins of this spicy dish and tries it out for himself.

Finally, Fieri ends his journey in New Orleans, where he visits a family-owned restaurant that has been serving up classic gumbo for over 80 years. He gets a lesson in how to make this traditional dish and gets to taste the restaurant's signature recipe.
