In the eighth episode of season two of Moveable Feast with Fine Cooking, titled New York - Staten Island, host Pete Evans heads to the green oasis of Staten Island, located just a short ferry ride from Manhattan. Pete is joined by local chefs Mario Gentile and James "Mac" Moran, who take him on a culinary tour of their hometown.

The first stop on the tour is the Staten Island Ferry Terminal, where Pete meets Mario and Mac. The trio then heads to Esca, a restaurant in the heart of Staten Island that specializes in Italian seafood dishes. There, they meet chef Dave Pasternack, who teaches them how to make a delicious dish of grilled squid with vegetables and herbs.

Next, Pete and the chefs visit Snug Harbor Cultural Center & Botanical Garden, a 83-acre park that is home to several historic buildings. Pete and Mac harvest some fresh vegetables from the park's organic garden, while Mario prepares a delicious salad using the vegetables.

For the main course, the group heads to Blue, a restaurant located in the town of Livingston, where they meet chef and owner John Pizzerelli. John prepares a mouthwatering dish of braised short ribs, which he serves with creamy polenta and sautéed mushrooms.

Finally, for dessert, Pete and the chefs visit Cake Chef, a bakery in the town of West Brighton, where they meet pastry chef Anthony Macri. Anthony demonstrates how to make his famous rainbow cookies, a traditional Italian-American dessert.

Throughout the episode, Pete and the chefs also explore the borough's rich history and culture, including a visit to the Alice Austen House, a museum dedicated to the life and work of the pioneering female photographer, and a trip to the historic St. George Theatre, a beautifully restored 1929 movie palace that now serves as a performing arts center.

With its stunning views, diverse culinary scene, and rich cultural heritage, Staten Island proves to be a culinary adventure all its own in this episode of Moveable Feast with Fine Cooking.
