In the sixth season's eighth episode of the show Mystery Diners, we get a glimpse into a restaurant that seems to be dealing with some serious issues. The episode is titled "Raw Deal," and it's safe to assume that some uncooked or improperly cooked food might be on the menu.
The show is hosted by Charles Stiles, a private investigator who is hired by restaurant owners to investigate issues they're having with their staff. In this episode, we meet the owner of Osteria Calabria, Tony who has a feeling that someone on his staff is mishandling the meat that he brings in for his popular meatball sliders. Tony suspects that one of his chefs may be serving raw or spoiled meat, which can be a huge health hazard and cost the restaurant its reputation and profits. To get to the bottom of this mystery, he calls in Charles and his team of mystery diners.
Charles's team consists of a group of undercover diners who make reservations at the restaurant to perform a "taste test" and evaluate the service, all the while keeping an eye out for anything suspicious. They are equipped with hidden cameras and microphones and look like regular customers, so the staff has no idea that they're being monitored. As the team dines, they keep their eyes and ears open to see if Tony's suspicions are true and if someone on the staff is truly serving undercooked or unsanitary food.
The mystery diners are seated by the hostess, Kara, who seems pretty professional and welcoming. The team then starts to order an array of dishes from the menu, including the meatball sliders, which are the star dish of the house. However, as they eat their way through the meal, the team begins to notice some strange things happening in the kitchen. The chefs seem disorganized and uncommunicative, the cooks are running around with no designated jobs, and the waitstaff seems to be misplacing orders.
The mystery diners also observe that a short order cook named Alex seems very shady and sneaky. He's always on his phone, seems to be hiding something in his apron, and even takes a bunch of raw meatballs out through the back door. Could he be the one responsible for mishandling the meat? Or is there someone else on the staff who is to blame?
As the meal progresses, the team starts to see some unappetizing signs of trouble. One of the diners finds a hair in her food, and another finds a piece of metal wire in his dish. This puts the team on high alert and makes them even more determined to get to the root of the problem.
Finally, towards the end of their meal, the mystery diners catch Alex in the act of stealing food—specifically, raw meat that he plans to sell on the black market. The team confronts him, and Alex runs away, confirming their suspicions that he was doing something illegal in the kitchen. But this revelation doesn't put an end to the mystery altogether. Charles and his team know that they need more evidence to make a case against the restaurant staff for poor handling of the meat.
So, the next day, Charles sets up a fake health inspection, pretending to be an inspector coming in to evaluate the restaurant's health standards and processes. Tony, the owner, is understandably nervous, and the staff seems to be on edge as well. But when the fake inspection team reveals their true identities as the mystery diners, the whole staff is shocked into revealing their secrets.
Two chefs confess that they've been undercooking meat to save time, while a bartender reveals that she's been stealing alcohol and overcharging customers. The owner is dismayed by what he's hearing but grateful to finally know the truth about what's been going on in his restaurant.
In the end, Charles Stiles and his team of mystery diners work together to help Tony and his staff clean up their act and restore the reputation of Osteria Calabria. They've solved the mystery of the raw deal, exposing a few bad apples in the process, and helped the restaurant get back on the right track.
