Zimmern also discovers the unique fusion of African and Puerto Rican flavors at the family-owned restaurant La Morada. Here he tries mofongo, a traditional Puerto Rican dish made with mashed plantains and topped with pork and a special sauce made with herbs and spices.
Next on the list is a visit to the chic French restaurant Red Rooster. Executive chef Marcus Samuelsson has created a menu inspired by the diverse cultures of Harlem and Zimmern gets to try some of the signature dishes like yardbird and shrimp and grits.
To round out his culinary tour, Zimmern heads to the legendary Apollo Theater where he discovers the theater's role in shaping Harlem's jazz and soul music scene. He also visits Melba's, a popular restaurant owned by Harlem local Melba Wilson, where he tries her signature fried chicken and waffles.
