In Carnival Eats season 8 episode 7, titled "Dude, Where's My Carb?", host Noah Cappe travels to the San Diego County Fair to explore the unique and delicious food offerings.

The episode starts with Noah trying a crowd favorite, deep-fried pineapple, topped with vanilla ice cream and caramel sauce. He then moves on to sample a crispy grilled cheese sandwich, aptly named The Ultimate Crunchy Grilled Cheese, which is stuffed with crushed potato chips.

Noah next meets up with Chef Dominic of the Rainbow City Bandwagon to try his take on Mexican street corn, called Elote Loco. It's a juicy ear of corn smothered in mayo, cotija cheese, hot sauce, and bacon.

One standout dish of the episode is the Bacon-Wrapped Pork Belly on a Stick from Bacon-A-Fair. The massive pork belly slab is wrapped in bacon and slow-cooked on a rotisserie for hours before being served alongside a side of Dave's Killer Magic BBQ sauce.

For something on the sweeter side, Noah checks out a smorgasbord of homemade fudge, with flavors ranging from classic chocolate to more unconventional flavors like peanut butter and jelly.

Noah ends the episode with a visit to Pink's Famous Hot Dogs to try their namesake Provence Burger. The burger is served on a brioche bun and topped with goat cheese, roasted red peppers, and arugula, rounding out a successful day of indulgent fair eats.

Throughout the episode, viewers are treated to an inside look at the preparation behind each dish, and the vendors who create them, making for a truly immersive food experience.
