In season 2015 episode 16 of Diners, Drive-Ins and Dives, host Guy Fieri dives into some Tri-Continent Cuisine. In this episode, he explores the flavors and dishes that are inspired by three different continents - Europe, Asia, and Africa.
First up, Guy heads to San Francisco to try the paella at Coqueta. This Spanish dish is a combination of saffron-infused rice, chorizo, clams, chicken, and shrimp all cooked up in one big pan. The restaurant also serves up some classic tapas like croquetas and an amazing octopus dish.
Next, Guy travels to Nashville, Tennessee, to visit a Vietnamese restaurant called Vui's Kitchen. The menu here is all about fresh, healthy ingredients and traditional Vietnamese flavors. Guy tries the pho, a savory noodle soup made with slow-cooked beef bones, ginger, and other fragrant spices. He also tries the grilled pork vermicelli bowl and the banh mi sandwich - all of which are packed with flavor.
In New York City, Guy heads to a Moroccan restaurant called Cafe Mogador. Here, he tries the lamb tagine, a hearty stew made with fragrant spices like cinnamon, coriander, and cumin. He also samples some delicious dips and spreads like hummus and baba ghanoush, as well as the classic Moroccan mint tea.
Finally, Guy travels to Denver, Colorado, to try the Ethiopian cuisine at Queen of Sheba. Ethiopian food is all about communal eating, with diners using injera bread to scoop up different stews and sauces. Guy tries the doro wat, a rich chicken stew flavored with berbere spice, and also samples the kitfo - raw Ethiopian beef that's been seasoned with spices and cooked with butter.
Throughout the episode, Guy marvels at how all of these different cuisines have been adopted and adapted by American chefs and diners, creating a delicious and diverse food landscape.
