In season 1, episode 6 of "Man, Fire, Food" titled "Fire: Extreme," host Roger Mooking travels around America to explore the use of fire in extreme ways to cook food.

The episode begins with Roger visiting a cowboy-themed restaurant in Kansas City, where he watches as the chef prepares an enormous tomahawk rib-eye steak over a blazing open flame. The chef uses a unique technique of searing the steak on one side before flipping it over, propping it up on its side to cook the other side and get that perfect char that gives the steak its flavor.

Next, Roger travels to Dearborn, Michigan, to a Lebanese bakery where they specialize in firing up a massive oven to cook an endless supply of traditional pita bread. The oven is fueled with hardwood and the temperature is so intense that the bakers must wear protective gear to avoid getting burned. Roger watches in awe as the bakers expertly shape and bake the bread, and tells us that the aroma of fresh pita bread in such large quantities is simply intoxicating.

In Austin, Texas, Roger meets up with a BBQ pit master who makes his famous brisket over a massive wood fire at an event called the "Texas Throwdown BBQ competition." The pit master explains his technique of using only oak wood to smoke the beef brisket for up to 18 hours, and Roger marvels at the delicious results.

Next, Roger heads to Colorado, where he meets a chef who constructs a huge outdoor kitchen using a custom-built grill that's more like a giant oven, with a fire burning in the bottom and racks of meat skewered on spits rotating above it. The chef uses this amazing contraption to cook whole lamb and fish, and Roger can't help but lick his fingers at the finished product.

Finally, Roger visits a winery in Newberg, Oregon, where they have a wood-fired pizza oven that's so big it can cook up to 12 pizzas at once. Roger watches as the chefs load the oven with fresh dough, tomato sauce, cheese, and other toppings, and the aroma of the pizzas baking is absolutely mouthwatering.

Throughout the episode, Roger explains how fire plays such an integral role in cooking, and how the different methods used in each location creates unique and flavorful dishes. "Man, Fire, Food" season 1 episode 6 is an exciting testament to the power of fire and how it shapes the food that we eat.
