In Man, Fire, Food season 4 episode 3, titled "Low Country Cookouts," host and master chef Roger Mooking sets off on a culinary adventure to showcase the rich food culture of the Lowcountry region of the southeastern United States. This region is home to a unique blend of African, Native American, and European influences, which has resulted in some of the most delicious and flavorful dishes in the country.
In this episode, Roger travels to South Carolina to experience some of the best outdoor cooking traditions that the Lowcountry has to offer. He starts off by heading to Hilton Head, where he attends a local barbecue competition. Here, he meets some of the best pitmasters in the area, and learns about the secrets to their award-winning barbecue recipes.
Next, Roger heads to Brunswick, Georgia, where he explores the rich seafood culture of the area. He meets up with the owner of a local shrimp boat, and learns about the different types of shrimp that are harvested from the nearby waters. The two then head to the shore, where they build a fire and cook up a feast of fresh-caught shrimp, seasoned with local spices and herbs.
After that, Roger visits a local farm to see how some traditional Lowcountry ingredients are grown. He helps harvest some fresh vegetables, and then heads to a nearby outdoor kitchen to cook up a delicious vegetarian meal using the farm-fresh ingredients.
Throughout this episode, Roger learns about the unique cooking traditions of the Lowcountry, and the rich history behind the region's most beloved dishes. From slow-smoked barbecue to flavorful seafood stews, he discovers the magic of outdoor cooking in this beautiful and diverse part of the United States.
