Guy's next stop is to a bakery in Kansas City, Missouri that has been a local institution since 1919. The bakery is famous for its buttery, flaky croissants, made fresh daily with high-quality ingredients. Guy gets a peek behind the scenes to see how the croissants are rolled and baked, and samples a few different varieties, including almond, chocolate, and ham and cheese.

Finally, Guy heads to a soul food restaurant in St. Louis, Missouri that has been serving up classic dishes for over 30 years. The restaurant's owner and head chef is famous for her fried chicken, which is brined overnight and then fried to golden perfection. Guy tries a plate of the chicken, served with collard greens, mac and cheese, and cornbread.

Throughout the episode, Guy meets the owners and chefs of each restaurant and learns the stories behind their long-standing legacies.
