Guy tries their chopped pork sandwich, which is piled high with smoky, tender meat and served with their signature sauce.

After indulging in some classic Memphis BBQ dishes, Guy heads over to Central BBQ, a modern BBQ joint that has gained nationwide recognition for their innovative spin on traditional BBQ. Guy meets with co-owners Craig Blondis and Roger Sapp to learn about their unique approach to BBQ, which blends traditional Memphis-style smoking with flavors from around the world. Guy tries their BBQ nachos, a popular dish that combines crispy tortilla chips with smoky pulled pork, cheese, and BBQ sauce.

Finally, Guy visits The Bar-B-Q Shop, a family-owned BBQ restaurant that has been serving Memphis-style BBQ since 1987. Here, Guy meets with owner Eric Vernon to learn about their signature dish, the BBQ spaghetti, which is made with pulled pork and their secret recipe sauce. Guy also tries their famous ribs, which are rubbed with a blend of spices and slow-cooked over hickory wood, resulting in tender, juicy meat with a smoky flavor.
