The episode starts with James visiting Smoke N Ray's BBQ food truck in Oklahoma City, where owner Ray Tennyson serves up mouth-watering barbecue dishes inspired by his Native American heritage. James tries a plate of brisket sliders topped with Indian fry bread and a side of sweet potato tots infused with cinnamon and clove. Next up is the Cherokee Nation's Three Rivers Smokehouse food truck, which serves classic favorites like pulled pork, as well as Native American dishes like bison burgers and fry bread tacos.

After Oklahoma, James heads to Austin, Texas to sample the food at three different trucks. First up is Chi'Lantro, a Korean-Mexican fusion truck with a cult-like following thanks to their signature dish, the kimchi fries. James tries a plate of crispy fries topped with spicy kimchi, savory beef bulgogi, and creamy Sriracha mayo. Next, he visits The Peached Tortilla, a truck that puts an Asian twist on southern dishes like tacos and sliders. James tries a Korean BBQ taco with cilantro slaw and a side of crispy brussels sprouts. Finally, James heads to the Mighty Cone, a truck that specializes in cone-shaped, hand-held meals. James tries their signature dish, a cone filled with crispy chicken, avocado, and cheddar cheese, all wrapped in a warm tortilla.

The last stop on James' journey is the Gourdough's doughnut food truck in Austin, where he satisfies his sweet tooth with an over-the-top dessert. Gourdough's specializes in giant, doughnut-based creations like the "Fat Elvis," a doughnut topped with peanut butter, bacon, and banana. James tries the "Flying Pig," a doughnut topped with bacon, maple syrup, and cream cheese icing.

Throughout the episode, James also speaks with the owners and chefs of each truck to learn about their unique culinary backgrounds and inspirations. Cowboys & Indians is a showcase of some of the best food trucks in the southern United States, putting a spotlight on the diverse and delicious cuisine available on the road.
