Man, Fire, Food is a documentary-style cooking show that explores the many ways to cook with fire. In each episode, host Roger Mooking travels across the United States in search of inventive and flavorful dishes, all cooked over an open flame.

Season 9, Episode 5 is titled "Meat in Full Swing," and it features some of the most impressive and creative ways to cook meat using only fire. In this episode, Roger Mooking takes us to Texas to meet pitmaster Dustin Pustka, who cooks whole animals on a massive rotisserie he built himself.

Dustin's rotisserie is a work of art, and he takes great pride in cooking everything from beef ribs to whole pigs to entire lambs. Roger watches as Dustin preps a lamb for the rotisserie, injecting it with a flavorful marinade and seasoning it with a special blend of spices. Then they hoist it up and set it to spin over a blazing fire.

Next, Roger travels to Alabama to meet up with chef Josh Quick at his restaurant, Odette. Josh has mastered the art of cooking meat over an open flame, and he shows Roger how he prepares one of his signature dishes: a smoked beef ribeye topped with chimichurri sauce.

Josh starts by rubbing the beef with a blend of spices, then he sears it over a bed of hot coals. Once it's nice and crispy on the outside, he moves it to a cooler part of the grill and smokes it until it's perfectly tender on the inside. Then he tops it with a bright and herbaceous chimichurri sauce made with fresh parsley, cilantro, and garlic.

Finally, Roger heads to Arizona to meet up with chef Justin Beckett, who's known for his creative and modern take on classic comfort food. Justin shows Roger how he uses fire to make a dish called "smoked meatloaf," which is a twist on a classic American favorite.

Instead of baking his meatloaf in the oven, Justin wraps it in bacon and smokes it over a wood fire. As it cooks, the bacon crisps up and infuses the meatloaf with its salty, smoky flavor. Once it's done, Justin tops it with a tangy and sweet tomato glaze and serves it up hot and fresh.

Overall, "Meat in Full Swing" is a mouth-watering episode that showcases some of the most inventive and delicious ways to cook meat over fire. From whole animals on a rotisserie to modern twists on classic comfort food, this episode will have viewers itching to light up their own fires and get cooking.
