The first stop on this culinary adventure takes us to a small-town diner in San Diego, where Guy meets owner Tina, who has been running the place since she was a teenager. Guy meets owner Joe, who shows him how they make their signature spinach and ricotta-filled ravioli from scratch, using a pasta roller that's been in the family for generations. Guy is impressed by the level of expertise and care that goes into each dish, and of course, can't resist trying a few bites himself.
The fourth stop on the tour is a diner in Durham, North Carolina, where the owner, Chef Andrea, specializes in classic Southern dishes like fried chicken and waffles, shrimp and grits, and sweet potato pie. Guy joins Andrea in the kitchen to learn how they make their famous scratch-made biscuits and gravy, using a secret family recipe passed down through generations. Guy is impressed by the depth of flavor in the dish and can't resist going back for seconds.
Last but not least, Guy heads to a funky gastropub in Portland, Oregon, where the chef-owner, Lisa, specializes in elevated pub fare like bangers and mash and fish and chips. Lisa gives Guy a crash course in making scratch-made pierogies, a staple on their menu, filled with potatoes and cheddar cheese and served with sour cream and caramelized onions. Guy is blown away by the pierogies' rich, savory flavor and can't resist lavishing praise on Lisa and her team.
Throughout the episode, Guy meets the passionate chefs and owners behind each of the featured eateries, learning their unique stories and the secret to their scratch-made classics. The show is a celebration of classic American dishes and the local chefs and foodies who keep them alive.
