In the fifth episode of the 18th season of Diners, Drive-Ins and Dives, host Guy Fieri sets out on a culinary adventure to explore the world of authentic cuisine. Guy gets hands-on in the kitchen and learns how to make the dumplings from scratch. He is in awe as he sees the chefs prepare the dumplings with such precision.

In the third segment of the episode, Guy heads to Colorado Springs, Colorado to visit a southern-style barbecue joint. The owner shows Guy how to make a pulled-pork sandwich with house-smoked pork that has been marinated overnight in a special blend of spices and then smoked for hours. Guy enjoys the smoky flavor and decides to try some of the other dishes on the menu.

Next, Guy travels to Austin, Texas to visit a Mexican restaurant that serves authentic tacos. He meets with the owner and learns about the different types of tacos that are popular in the region. He tries a chicken taco and is blown away by the rich flavors and tender meat. Guy also gets a taste of the restaurant's famous queso dip, which is made with homemade cheese and served with warm tortilla chips.

Lastly, Guy heads to a Cajun restaurant in Lafayette, Louisiana where he tries some of the most authentic and delicious Cajun-style cuisine in the country. The owner shows Guy how to make a classic gumbo and teaches him about the different types of sausage used in the dish. Guy also tries some crawfish and decides it's some of the best seafood he's ever tasted.

Overall, this episode of Diners, Drive-Ins and Dives is a delicious journey through some of the most authentic and mouth-watering cuisines in America.
