In the seventh episode of season 4 of Bizarre Foods, host Andrew Zimmern sets out on a culinary adventure to explore the unique and often unconventional cuisine of Texas. He also visits a local restaurant that specializes in wild game, where he tries dishes made from exotic meats like elk, bison, and kangaroo.

One of the highlights of Zimmern's Texas journey is a visit to the town of Fredericksburg, located in the heart of the Texas Hill Country. Here, he meets with a family of German butchers who have been making sausage for generations. Using traditional techniques and recipes passed down through their family, they produce some of the most unique and flavorful sausages in the state. Zimmern tries several varieties and learns about the German influence on Texas cuisine.

Zimmern also ventures into the heart of Texas cattle country to learn about the state's rich history of ranching and cowboys. He visits a ranch where he learns about the process of raising cattle and tries some of the unconventional cuts of meat that are often overlooked by more mainstream restaurants.

Throughout his journey, Zimmern meets with locals, chefs, and food experts to learn about the history and culture behind Texas cuisine.
