In the city of Makassar, on the island of Sulawesi, Zimmern tries a family recipe called konro, which is a spicy beef rib soup flavored with lemongrass and galangal. He also eats ikan bakar, a grilled fish dish prepared with a sweet sauce made from kecombrang flowers.
In Lombok, Zimmern experiences a unique way of roasting chicken called bakar dower. The chicken is marinated in a spicy coconut milk and then roasted over hot coals until crispy and juicy. He also samples some of the local specialty satay, which is skewered meat grilled over charcoal and served with a peanut sauce.
Finally, Zimmern heads to the easternmost province of Papua to discover the unique cuisine of its indigenous tribes. He samples a dish made from sago palm, a staple food for the Papuan people, and is introduced to a woman who hunts wild boar with a bow and arrow. He watches as she prepares and cooks the boar using traditional techniques.
Throughout the episode, Zimmern also learns about the cultural significance of the various dishes he tries and the history behind them. He marvels at the breathtaking natural scenery throughout Indonesia and meets friendly locals who are eager to share their culinary traditions.
