In the fourth episode of Food Truck Nation season 1, titled Pasta, Tacos and Doughnuts, host Brad Miller travels to three different food trucks located in Austin, Texas.

First up is the Patrizi's truck, which serves up homemade pasta dishes using family recipes passed down through generations. The truck is run by brothers Nic and Matt Patrizi and their mother, who all work together to create fresh pasta dishes with locally sourced ingredients. Brad gets a chance to see the pasta-making process from start to finish and tries their signature dish, cacio e pepe.

Next, Brad visits the Mellizoz Tacos truck, owned by twin brothers and chefs Marco and Diego. The brothers fuse their Mexican heritage with Texas-style flavors to create unique tacos, such as their brisket taco made with slow-cooked brisket and a spicy salsa. Brad tries a variety of tacos and learns about the importance of using fresh, quality ingredients in Mexican cuisine.

Finally, Brad heads to the Little Lucy's Mini Donuts truck for a sweet treat. This truck specializes in mini donuts made fresh to order, with various toppings and flavors available. Owner Stephanie Vasquez explains the process of making the mini donuts and Brad gets to try a few different flavors, including cinnamon sugar and cookies and cream.

Throughout the episode, Brad also highlights the challenges and rewards of running a food truck, as well as the unique and diverse food culture of Austin.
